Curry Chicken Pot Pie




I made this tonight for the famdamly, it was very nummy. Dude declared it a "keeper".
I found the recipe on foodnetwork, one of Alton Brown's recipes. You CANNOT go wrong with Alton Brown!






Ingredients

  • 4 cups frozen vegetable mix, peas, carrots
  • 1 to 2 tablespoons canola oil
  • 3 tablespoons butter
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 1/2 cups low sodium chicken broth
  • 1/2 cup milk
  • 3 tablespoons flour
  • 1 teaspoon curry powder
  • 2 tablespoons dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
  • 2 cups cubed cooked chicken
  • 1 package puff pastry

Directions

Preheat oven to 400 degrees F.

Toss frozen vegetables with canola oil and spread evenly onto a sheet pan. Place into oven and cook until golden brown.

In a saute pan heat 1 tablespoon of butter and sweat the onion and celery. In another saucepan, heat the broth and milk. Add 2 more tablespoons of butter to the celery mix and cook out the water. Add the flour and curry and cook for 1 to 2 minutes. Whisk in the hot milk mixture and cook until thickened. Add the parsley, salt and pepper. Toss the browned vegetables and the chicken. Pour into a shallow baking pan, or a large terra cotta pot base, lined with foil, and top with 6 to 8 circles of puff pastry. Place into the oven and cook until puff pastry has browned and the mixture is hot and bubbly, about 25 minutes.

Changes I made were:

Used fresh and frozen veggies

Added sauted mushrooms

Used pie crust instead of puff pastry (my local Smith's didn't have any puff pastry).

I also served it with white rice:

1 C Jasmine rice

2 Chicken boullion cubes

2 1/4 C Water

2 TBS butter

Crush boullion cubes, combine all ingredients, bring to boil, stir and lower heat to simmer for 18-20min.

Leather Wall Update




I realized I haven't updated my "Leather Wall" post... I've hung my new photo's of the kids, as well as our last 2 years worth of family photos.


I'm sure I will expand on the photos as years (or the summer) goes by, but this is a start for now!


Also, having moved my sewing/craft stuff up to my new 'studio', (It all used to be up against the 'leather wall) I now have a TON more room in the front room.


Seriously, the room hasn't felt this big since we moved in!


And yes, the remaining walls in the room are all now blank (I'm soooo not used to having ANY wall space at all!), that now I suppose I'll have to make a wall hanging or something to add a bit more excitement in here...


I'm sure you'll see it when I figure it out!


And last but not least... Bubba napping/nursing the nasty cold that has clobbered us all in the past week or so. At least he's napping through the neighbor kids birthday party... the one Douglas is attending, and Drew thinks he should be. Now he won't even realize he missed it!

Rainey Days and Mondays!














Welcome to Spring Break in Utah...

Douglas is out of school all week, and our Monday started out wet wet wet.

Drew constantly wants "outside!" now, he's even learned how to (mostly) undress himself in the mornings in order to force me into getting him dressed into play clothes suitable for outside. (At least he realizes jammies are not outside clothes!)

So today, as we did the ritual point out the window and yell "ME OUTSIDE!" I tried to explain that it was raining and wet... and mucky.

I lost.

The kids got to use the new IKEA umbrellas I bought last year, and Drew got to wear his froggy boots, (hand me downs from Douglas that are WAYYYY to big for Drew still), and away they went to parade around the house and open and close the umbrellas a million times.

Until Drew started using his umbrella as a Bulldozer, ripping a hole in one of the seams....

Why do I buy umbrellas?


New Sewing Room Addition


I finally got some RED into my Sewing room. I've had this old wood dresser for about 8 years now, it used to be my grandma's and was given to me when she moved to Washington. It used to be brown, and for years was Douglas' clothing dresser. It's been out under my carport in pieces for about a month now, and I was going to paint it then sell it... But after it was done...I decided it was cute enough to make room for!

My Pirates of Penzance
























I ordered the boys some new PJ's from Crazy 8 the other day..(had to use up my Crazy Cash!)

They arrived today. I don't think the boys like them...


They haven't been wearing them since they arrived around 3:00 this afternoon.


They haven't been holding fake pirate fights, and stomping/swaggering around throwing out pirate words like: "Aaarrggghhh... shibber my fimbers!"


They don't even think they'll watch a pirate movie tonight.

I REALLY need to get a copy of Ray Stevens "The Pirate Song"...."I want to sing and dance like a pirate of Penzance, wear me silver buckled slippers and me tight shiny pants (boom boom), I want to sing and dance!"

Ahhh.. (or Ahhrrggg as the case may be), isn't it cute to see the good ol' pirate buddies?

Wait a minute... what is Drew doing to Douglas? Hey uh, kids......!

Vintage Sheet Quilt!



I finished my Vintage Sheet Quilt top!

My sister Shannon and I both found some great vintage sheet fat quarters on an Etsy site. We decided to share them and make our own style of quilts!


Shannon made this darling top with hers....



I used the 'Garden Brick Wall' pattern from Quilt Magazine.















As you can see, this is a Queen size top. Now just need to find a cool King sized sheet to back it with, and send them off to El Paso for Shannon to quilt for me! Whooo Hoooo!

February, March, April Blocks of the Month


I finished the last 3 months Blocks of the Month tonight!

First time I've sewn since getting my new space! Also since having my machine serviced!

Have to say, I'm loving both!

Leather Wall


I refinished the wall in my front room where my sewing stuff used to reside...

It used to be a darker green... almost the same shade as the green on the stairs, just a little deeper. (Sorry I didn't take a before photo!)

I was trying to lighten the wall up, and thought maybe putting a tan glaze on top would look good...it didn't.

So I dug around in my pile of "oops" paint, and found a quart of brown I'd never used. I thinned it using equal parts paint and glaze and brushed it on in short strokes, in all directions (up, down, sideways, diagonal, etc.)

After about a 6' space was painted, I munched either a plastic tarp, or plastic bag on the paint. I found the bag was easier to use, size wise...

I then let the paint dry for about 2 minutes, and dry brushed over it again. In all directions again...

This is the result! Looks like leather to me.

So if you want a similar look...good luck, or you have 3 layers of paint to go through!

Sewing/Craft/Hobby Room/Studio!


I got my stuff moved into my room and mostly organized!

Here is a tour, clockwise, starting on the wall to the left of the door.

My awesome new/used hutch! Notice in the corner my door knob cabinet, yarn crate, and antique sewing machine... we'll come back to them...





Turning to the right, you see my Ikea Expedit shelving and desk, all my cool baskets full of sewing fabric and goodies, and my other sewing/crafty related stuff...patterns, fabric paint, felt, presser feet, etc...










To the right of the shelving is my new/used apothecary cabinet, now filled with sewing accessories such as, buttons, measuring tapes, ribbon, zippers, elastic, and on and on and on....


I hung my completed 'sisters' quilt above it, but it's feeling a little crowded, so I'll probably use it elsewhere. Gives me a little space to plan something for!









Keep turning right and you see my cool new hall tree with bench (or THRONE as it has been dubbed by my hubby and numerous sisters!)

I plan on getting some kind of hanging system for above the closet doors, to hang quilts-in-progress from.









Now, back to that corner... I'm not sure about the placement of this stuff...will play around with it and see if something better pops out. FYI-the blanket is for my kitties to sleep on...















And one last shot of my cute baskets on top of the shelving....


Notice: no red accents yet... I'm planning a seat cushion for the throne, and covering the 'box' above the window in a neat coordinating fabric.

Fun in the Spring Snow!





Our next door neighbor Keri invited the kids over to make snowmen this afternoon...

It was sunny when we started, but the gray gloom quickly moved in and the airport started seeding, didn't slow us down though!







I don't think they had any fun...

Did anyone else wake up with a 8" snowy surprise outside today?















I swear, the kids were out running around in 'shorts' weather only a couple of days ago!










I watched this branch bobbing up and down from the weight of the snow at about 4am this morning.... heard it give sometime after I'd crawled back in bed.
